The daily fish market closes very early, so when ordering for 'next day' delivery, if fresh scallops are unavailable, we will use (previously) frozen scallops.
As a fresh caught product, due to many different factors such as bad weather conditions and seasonality, product may be previously frozen or may occasionally be substituted with a similar alternative.
